CIEH Award in Supervising Food Safety in Catering Level 3

Changes in legislation effective from January 2006 place greater onus and accountability on anyone in the food business in supervisory roles. It is therefore vital that they are equipped with both the knowledge and confidence to do their job effectively. This award replaces the CIEH Intermediate Certificate in Food Safety

Who will benefit:

Managers and supervisors in medium and large manufacturing or catering businesses will benefit from this qualification. It is particularly relevant for those who have to develop or monitor HACCP based food safety management procedures and systems.

Entry requirements:

It is recommended that participants would have some understanding and knowledge or basic food hygiene ideally gained through the CIEH Foundation Certificate in Food Hygiene or Level 2 Award in Food Safety, within the last three years.

Course Aims:

On completing this qualification participants will be able to understand the terminology with respect to supervising food safety, the techniques involved in controlling and monitoring food safety, the concept of food hazards and the risks associated with them, that some micro-organisms have the potential to cause illness, the role temperature plays in the control of food safety and the importance of supervising high standards of cleanliness in food premises.
